Ingredients

  1. 1 lb. / 454 g raw salmon fillet, preferably wild
  2. 2 Tbsp. / 9 ml olive oil
  3. 1 lime, halved
  4. Chipotle chili, ground or powder, to taste

Directions

  1. Preheat oven to 500°F / 260°C. Brush or mist metal baking sheet with 2 teaspoons of the olive oil.
  2. Rinse salmon, pat dry, slice into 4 fillets, and place on the baking sheet.
  3. Brush or mist each fillet with remaining olive oil.
  4. Squeeze the juice from ½ lime onto each fillet
  5. Sprinkle fillets with chipotle, then place a half lime on top of each fillet.
  6. Turn down oven temperature to 275°F / 135°C.
  7. Place salmon in oven and roast for 8-12 minutes, depending on how "well-done" is preferred.
