I have been working on my menu planner and so many of the recipes while sounding wonderfully tasty, contain ingredients that I have to stay away from due to High Vitamin K content. Items such as Green Leafy Vegetable and Brocolli. Can you suggest substitutes or would it be okay to perhaps substitute things I can have like cucumber, tomatoes or green peppers etc.?

Yes, that is the advantage of the Menu Planner application, that you can just stay away from items on the list of high vitamin K foods provided to you where you receive medical care and follow-up. Your suggested substitutions are just fine. In addition to green leafy vegetables, look out for curries and peppers as well as prunes.
Ossie, thank you so much and I appreciate the tips about curry and peppers. I did not know about those. I find it’s a little difficult getting information about Vitamin K content in a lot of foods. Definitely grateful for your help.
