Allergies … not just gluten but the actual GRAINS … I”m looking for good other food alternatives that I can use when the menu tells me to eat bread of any kind … I can handle only minimal amounts of rice, corn, wheat (even sprouted), rye, etc.
I also do not eat breads. I use crepes made from egg whites. I use them as wraps for my lunch, Can fill them with anything.
Hi, bonnieleek, and thanks for that incredible idea, sudiegirl. Any complex carbohydrate can be a good alternative to grains – i.e. potatoes (regular and sweet), winter squashes, peas, and organic corn. Legumes are a good source of carbohydrates with protein built in.
Note also that certain foods considered grains are actually pseudograins (i.e. amaranth and quinoa). Both of these examples can be used for both hot cereals and lunch/dinner side dishes. Buckwheat is also a pseudograin that yields flour useful to make baked goods when combined with potato and other non-grain flours.
