Ingredients
- 3 Yukon gold potatoes roughly chunked
- 2 large onions roughly chunked
- 2 cups ANY assorted vegetable you like
- 2 tbs coconut oil
- ¼ c Parmesan cheese
- 1 tsp salt
- 1 tsp pepper
Directions
- In a large bowl, cut up vegetables into bite sized chunks.
- Drizzle coconut oil over them, sprinkle Parmesan cheese over them, and toss them onto a cookie sheet with sides, Broil 500* from 20-30 minutes until brown and wonderful!
