Ingredients
- 2c whole grain gluten free flour mix
- 1c coconut palm sugar or brown Just Like Sugar
- 2 tsp baking powder, aluminum-free
- 1-1/2 tsp baking soda
- 3 tsp cinnamon
- 1/2 tsp freshly ground nutmeg
- 1 tsp ground ginger
- 1/2 tsp ground cloves
- 3 eggs, organic pastured
- 1/2c coconut fat, melted
- 2 cups / 15 oz pumpkin puree
- 1c 2% organic pastured dairy or light coconut milk
- 1/2 tsp kosher salt
- 2T flax seeds
Directions
- Mix all ingredients. Pour into a loaf pan coated with non-stick cooking spray.
- Bake at 350°F for 40-45 minutes.
