Ingredients
- 1 Tbsp olive oil
- 1 red onion, finely chopped
- 1 medium green pepper, finely chopped
- 1 celery rib, minced
- 4 garlic cloves
- 1 cup uncooked long-grain brown rice
- 1 28-oz can fire-roasted diced tomatoes/juice
- 4 cups dark red kidney beans, cooked or canned, drained
- 2 cups vegetable broth, no salt added
- 1 tsp dried thyme
- ½ tsp each filé powder and paprika
- ¼ tsp cayenne pepper
Directions
- Saute in skillet , onion, bell pepper, celery, and garlic in olive oil 3-5 min to soften.
- Transfer the sautéed mixture to a crockpot.
- Add next 7 ingredients, and cook on low for 8-10 hours .
