Ingredients

  1. 4 avocados, cut into bite-sized chunks
  2. 1 bunch green onions, chopped
  3. 1 can black-eyed peas or 1½ cups cooked, drained
  4. 1 can organic shoe peg corn drained
  5. 2 tomatoes chopped or 1 can petite cut tomatoes
  6. ½ c chopped fresh cilantro
  7. 3 Tbs red wine vinegar, or more to taste

Directions

  1. Drain all ingredients well in a colander except avocado.
  2. Mix ingredients in a large bowl.
  3. Add avocado and sprinkle with red wine vinegar.
  4. Toss gently.
  5. Serve immediately with organic chips.
