Ingredients
- 4 avocados, cut into bite-sized chunks
- 1 bunch green onions, chopped
- 1 can black-eyed peas or 1½ cups cooked, drained
- 1 can organic shoe peg corn drained
- 2 tomatoes chopped or 1 can petite cut tomatoes
- ½ c chopped fresh cilantro
- 3 Tbs red wine vinegar, or more to taste
Directions
- Drain all ingredients well in a colander except avocado.
- Mix ingredients in a large bowl.
- Add avocado and sprinkle with red wine vinegar.
- Toss gently.
- Serve immediately with organic chips.
