Ingredients

  1. 4 c low-fat cheddar and mozzarella mixture (preferably organic pastured), shredded
  2. 2 cans green chilies, chopped
  3. 10 oz. all-natural turkey sausage (preferably uncured), crumbled, or extra-lean ground turkey (preferably pastured), cooked and drained
  4. 12 organic eggs, omega-3 or pastured
  5. 2 tsp. ground black pepper
  6. 1 chopped white onion sautéed
  7. 1 chopped bell pepper sautéedr
  8. Salt or substitute to taste

Directions

  1. In a 9×13 casserole dish sprayed with non-stick cooking spray, sprinkle all of the cheese to cover the bottom of the dish.
  2. Evenly sprinkle the green chilies over the cheese, followed by the crumbled turkey, then the bell pepper and onion.
  3. Whisk the eggs together and pour over ingredients.
  4. Bake 400°F for 45 minutes.
