Ingredients

  1. 2 Cups lentils
  2. 6 Bay leaves
  3. 6 cloves garlic, whole bruised
  4. 2 Red peppers, diced
  5. 1 Red onion diced
  6. 6 cloves garlic diced
  7. 10 Tbs olive oil
  8. 10 Tbs red wine vinegar

Directions

  1. Boil water for lentils per pkg. directions with Bay leaves and whole bruised garlic cloves added to water.
  2. Add rinsed lentils cook until done. I like them with a little firmness, aldente.
  3. Rinse in cold water and remove bay leaves and garlic.
  4. Add diced Red Peppers and Red Onion, my husband likes a milder onion so I lightly sauté them first. Also add diced garlic.
  5. Mix the oil and vinegar and pour over salad, toss to coat.
  6. This uses a whole bag of lentils.

I like to use it as a side dish or over greens as a dinner salad.
