A lot of salad. Great for a party, but is easily Halved.

Ingredients
- 2 Cups lentils
- 6 Bay leaves
- 6 cloves garlic, whole bruised
- 2 Red peppers, diced
- 1 Red onion diced
- 6 cloves garlic diced
- 10 Tbs olive oil
- 10 Tbs red wine vinegar
Directions
- Boil water for lentils per pkg. directions with Bay leaves and whole bruised garlic cloves added to water.
- Add rinsed lentils cook until done. I like them with a little firmness, aldente.
- Rinse in cold water and remove bay leaves and garlic.
- Add diced Red Peppers and Red Onion, my husband likes a milder onion so I lightly sauté them first. Also add diced garlic.
- Mix the oil and vinegar and pour over salad, toss to coat.
- This uses a whole bag of lentils.
I like to use it as a side dish or over greens as a dinner salad.
