Ingredients

  1. 2 cups / 460 ml or 10 oz / 284 g rotisserie chicken, chopped
  2. 2 tsp / 10 ml olive oil
  3. 1 small onion, chopped
  4. 1 red sweet bell pepper, chopped
  5. 3 cloves garlic, minced
  6. 2 cups / 460 ml sweet potato, finely chopped
  7. 28 oz. tomato, chopped
  8. 15.5 oz. / 440 ml black beans, cooked or canned and drained (net 1½ cups / 340 ml)
  9. 1 cup / 240 ml corn
  10. 1 Tbsp / 15 ml chili powder
  11. 1 tsp / 5 ml cumin

Directions

  1. In a non-stick lidded two-quart/liter pan, warm oil over high heat.
  2. Sauté onion, garlic and peppers until just tender.
  3. Add remaining ingredients, cover, reduce heat to medium-low, and cook for 30 minutes until potatoes and corn are soft. Add water as needed to maintain desired consistency, and stir to prevent burning.
