Ingredients
- 2 cups / 460 ml or 10 oz / 284 g rotisserie chicken, chopped
- 2 tsp / 10 ml olive oil
- 1 small onion, chopped
- 1 red sweet bell pepper, chopped
- 3 cloves garlic, minced
- 2 cups / 460 ml sweet potato, finely chopped
- 28 oz. tomato, chopped
- 15.5 oz. / 440 ml black beans, cooked or canned and drained (net 1½ cups / 340 ml)
- 1 cup / 240 ml corn
- 1 Tbsp / 15 ml chili powder
- 1 tsp / 5 ml cumin
Directions
- In a non-stick lidded two-quart/liter pan, warm oil over high heat.
- Sauté onion, garlic and peppers until just tender.
- Add remaining ingredients, cover, reduce heat to medium-low, and cook for 30 minutes until potatoes and corn are soft. Add water as needed to maintain desired consistency, and stir to prevent burning.
