Refined carbohydrates

    Hi. I am reading a lot about carbohydrate resistance at the moment, and am wondering if Rice Flour, Potato flour (and similar other flours) are not just another form of refined carbohydrates? There is a lot of new research which speaks of low carbohydrate (specifically NO cereal), high fat diets, and then, when I see the meal plan of the Trim Down Club, which includes things like Oats pancakes, and muffins made with rice flour, I wonder if I am not kidding myself. My question is: Even though it is rice / potato (etc.) flour, surely the fact that it is refined makes it unhealthy?

    Hi, broncon. Potato flour and rice flour that is not from whole/brown rice are indeed refined (note: whole/brown rice flour is excellent).
    However, sometimes potato flour is necessary for gluten-free baking and sauce-making, and then it is in very small amounts. We actually do not often recommend potato flour – again, only for gluten-free baking.
