Ingredients

  1. 75 g Carrot
  2. 50 g Spinach
  3. 29 g Spring onion
  4. 2 cloves Garlic
  5. 70 g Yam
  6. 20 g Coriander
  7. 1-pint water
  8. 1 Tbsp. Olive oil

Directions

  1. Wash and chop all vegetables.
  2. Preheat oil in pan, and add garlic and allow it to ‘sweat’ off in oil until slightly brown.
  3. Add water and bring up to the boil.
  4. Then cover and simmer until vegetables are cooked.
  5. Add seasonings 5 mins before the end of cooking time.
