Ingredients

  1. 1 lb Lean pork tenderloin, organic/pastured, cubed
  2. 2 onions, finely chopped
  3. 2 tbsp. Thai red curry paste
  4. 2 tsp tamarind paste
  5. ½ tsp ground coriander/cilantro
  6. 1 red pepper, sliced
  7. 2 carrots, julienned
  8. 1 lemongrass stalk, finely chopped
  9. 3 tbsp. fresh basil, chopped
  10. 500 ml /2 cups low-sodium chicken broth

Directions

  1. Season the pork and quickly brown for a couple of minutes in a frying pan with a little olive oil spray.
  2. Remove from the heat and place in the slow cooker along with all the other ingredients.
  3. Combine well, cover and leave to cook on low for 5-7 hours or until the pork is tender and cooked through.
