The introduction talked about whole wheat bread as one of the 5 foods to avoid. In the 1st week of menus there are some whole grain breads. What is the difference, and what do I look out for when purchasing bread?
Whole grain includes other types of grain than wheat such as oats, barley, rye, maize and millett. Whole wheat is just wheat including the husk if it’s whole wheat.
Hi, Zimtgirl. The difference is in legal terminology. Unfortunately, “whole wheat” can mean that there is some whole wheat flour in the bread, while other flours can be refined. However, “100%” whole wheat means that only whole wheat is used – legally, there cannot be any refined flours in it. You still need to check the ingredients list to make sure there aren’t any other unpleasant surprises, though, such as hydrogenated or partially hydrogenated fats.
