Ingredients

  1. 1 lb / 454 g) well-washed green peanuts
  2. 1 Tbsp/ 14 ml or less mineral-rich salt or substitute (to taste)
  3. 1 qt/l water

Directions

  1. Fill clean [sand-scrubbed, no residue] 2-quart/liter pot with peanuts.
  2. Pour salt over peanuts.
  3. Pour water over peanuts.
  4. Bring to full boil.
  5. Boil until peanuts are consistency of baked beans—or softer. Test often by removing a peanut, shelling, and tasting.
  6. When done, pour into crocus sack.
  7. Rinse filled sack to remove external salt from peanuts.
  8. Empty washed peanuts from crocus sack onto dry, absorbant surface.
  9. Serve when dry, after approximately 2 hours.
