Ingredients
- 3 eggs
- 2 cups (16 oz. / 500 g) low fat cottage cheese
- 2 cups (8 oz. / 250 g) shredded cheddar cheese
- 10 oz. / 284 g package frozen spinach or chopped broccoli, steamed
- 1 tsp / 5 ml olive oil
Directions
- Preheat oven to 375°F / 190°F.
- In a medium bowl, whisk together eggs and cheese; add vegetables and mix well.
- Mist or brush a 12-inch / 30-cm pie dish with olive oil. Pour the mixture into dish and spread evenly.
- Cook for 35 to 40 min or until mixture is set and top starts to brown.
- Exchanges per Serving: 3 Protein, 1 Fat, ½ Veg
- Serving Size: 1 cup / 240 ml

Hi, Markie. It is for 6 servings, though you can have more if it is your entire lunch or dinner, and you have the available exchanges. To fit it into your menu, just compare the “Exchanges per Serving” at the end of the recipe to the exchanges allotted to you for a meal – you can see this by clicking on “Exchange mode” in the toolbar above your menu. You can trade carbohydrate exchanges for protein exchanges if you want to have more than one serving.
