Ingredients
- 3 oz / 85 g cooked or canned chicken, cut into bite-sized pieces
- 2 oz / 60 g whole grain pasta
- 1 cup / 90 g broccoli, chopped
- 1 Tbsp. / 14 g mayonnaise, omega-3, olive oil, or flaxseed-based
- 1 tsp. / 3 g onion, minced
- ¼ cup /30 g celery, chopped
Directions
- Set pasta to boil. When pasta is tender, remove from heat, drain, and cool.
- In the meantime, set broccoli to steam. When broccoli is just tender yet still green, remove from heat and set aside to cool.
- When pasta and broccoli have cooled, stir in chicken pieces, minced onion, celery, and mayonnaise.
