Ingredients

  1. 2 Tbsp extra virgin olive oil
  2. ½ tsp salt
  3. 2 cups quartered grape tomatoes
  4. ⅓ cup fresh cilantro
  5. 2 ½ cup chopped cucumber
  6. ⅓ cup fresh mint or basil
  7. 4 scallions
  8. 2 Tbsp garlic wine vinegar
  9. 2 Tbsp goat cheese
  10. ½ cup diced tomatoes

Directions

  1. Combine in food processor or blender. Leave a little chunky.
  2. Garnish with goat cheese and mint.

Serve cold. Makes four servings

Better on day two when flavors have permeated thoroughly but good on day one as well.
