Chicken Stir-Fry: Great!

Ingredients

  1. 4 organic chicken thighs
  2. 1 green bell pepper
  3. 1 red bell pepper
  4. 1 yellow bell pepper
  5. 1 cup shredded cabbage
  6. 1 small purple onion
  7. 2 Tbsp. olive oil
  8. ½ tsp. miso
  9. 1 tsp minced garlic
  10. 1 cup organic brown rice, cooked

Directions

  1. Cut chicken, peppers, and onion into bite-sized pieces.
  2. In a medium pan, cook chicken in 1 Tbsp. of oil with garlic and miso over medium-high heat until brown.
  3. In a different pan, cook peppers and onion with remaining olive oil.
  4. When the peppers are tender, add the cabbage, and continue to cook on medium heat for 7 minutes.
  5. Add the chicken mixture to the pepper mixture, and serve over brown rice.
