Why is corn not one of my options for a vegtable?
Hi, BaldwinC. If you can find organic or non-GMO corn, and it is fresh or part of a whole grain product, it’s fine. Note that fresh corn is in the “Starchy Vegetables” list in the Menu Planner under the “Carbohydrates” category (rather than “Vegetables”) because your body perceives it more like a bread than, say, lettuce.
