Ingredients

    1. 1 lb. (7 cups) / 454 g curly kale, cut into 3-inch / 7½-cm pieces
    2. 1 Tbsp / 15 ml organic white miso paste
    3. 2 Tbsp / 30 ml whole sesame tahini
    4. ½ cup / 80 g nutritional yeast
    5. Seasonings*

  1. 1 clove fresh garlic, minced
  2. ½ tsp. / 1 g ground black pepper
  3. ½ tsp. / 1 g cayenne or chili powder
  4. ½ tsp. / 1 g celery salt
  5. ½ tsp. / 1 g rosemary leaves, ground
  6. ½ tsp. / 1 g oregano, ground
  7. ½ tsp. / 1 g thyme, ground

Directions

  1. Combine all ingredients but a kale in a large bowl.
  2. Add kale and toss to coat well with the seasoning mixture
  3. Layer the coated kale onto a lined food dehydrator tray or baking sheet, and dehydrate or bake with oven door slightly ajar at 125°F/50°C for approximately 12 hours, or until crispy.

Miso paste is a salty concentrate for soups, gravies and sauces made from fermented soy beans, and nutritional yeast is like brewer’s yeast, “inactive,” but still high in protein and fortified with B-vitamins. You can find miso in the Asian sections of most supermarkets and nutritional yeast in stores that sell vitamins, and both products in health-oriented stores like Whole Foods Market or even your neighborhood health food store.
