I am learning about Olive oil and some of what. I have read says that Olive oil should only be used raw, and never cooked. I have learned that when cooked, the heat converts the healthy oils to toxins. However, recipes and articles on this site do say that coking with Olive oil is healthy. So what is the scoop? I have heard before that butter or coconut oil are best for cooking but that Olive oil is only to be used uncooked. I just want to clarify about what is factual and what is not, so that I may be able to make some healthy choices about my fats.
Hi, Sue. Olive oil is actually quite stable, and so is good for cooking. The point is to not let it smoke, because the solids should not be overheated.
