Ingredients

  1. 4 lb / 2 kg raw spaghetti squash or:
    • 5 cups / 775 g cooked
  2. 1 lb / 454 g lean ground turkey, preferably organic pastured
  3. 1 tsp. / 1¾ g ground cumin
  4. 2 Tbsp. / 30 g chipotle peppers in adobo, chopped (optional)
  5. 4 raw garlic cloves, minced or:
    • 2 tsp. / 12 g garlic powder
  6. 1 Tbsp. / 1 g fresh oregano, chopped or:
    • 1 tsp. / 1 g dried oregano
  7. 1 medium tomato, chopped
  8. ½ small onion, chopped
  9. ¼ cup / 4 g fresh cilantro/coriander leaves, chopped
  10. Juice from ½ lime (about 1½ Tbsp. / 22 ml)
  11. ¼ tsp / 1½ g salt, preferably Himalayan, Celtic, or Aztec kosher-type salt (optional)
  12. ½ tsp / 1 g ground black pepper
  13. 1 cup (8 ounces) / 240 ml Greek yogurt, preferably organic pastured
  14. 1 cup / 120 g low-fat Mexican cheese (queso fresco), grated

Directions

  1. Preheat oven to 350°F / 180°C.
  2. If you don't already have squash-spaghetti ready, cut open the raw squash lengthwise, and steam or roast until tender, about 1 hour; when ready, remove 5 cups / 1¼ liters of strands with a fork, and set aside while preparing the rest of the recipe. If you wish, save the squash shell for serving.
  3. In a medium lidded non-stick saucepan, brown the turkey for about 5 minutes. Drain and return to pan.
  4. Add the cumin, chili, garlic, oregano, and lime juice; stir well, cover, and reduce heat to low. Simmer for about 10 minutes.
  5. Sprinkle salt and black pepper over the squash strands, and place in a 12-inch / 30-cm casserole dish or the emptied squash shells.
  6. Pour the turkey-tomato (chili) mixture over the squash. Sprinkle with ½ cup / 60 g of shredded cheese.
  7. Spoon the yogurt over the chili, and sprinkle with remaining ½ cup / 60 g of shredded cheese.
  8. Bake 30 minutes or until heated through.
This is a healthy and satisfying dish. Serving size: 2 cups / 480 mg Exchanges per Serving: ½ Carb, 2½ Protein, 1 Veg

  1. Hi – I am a new member and have been looking at the recipes, some I would love to cook. BUT I live on my own. I really want to know if the is a way of downsizing the recipes to make portions for 1 or 2 people? Without me having to trying to use my none existent maths skills. Many Thanks Thia

    • Hi, Gwen. Hopefully you are being followed by a diabetes care provider who is familiar with your case.
      If you have been on restrictive diets in the past, it can seem like a large amount of food. However, it is based on your nutritional needs to support gradual weight loss; as you progress, the amount of food will get smaller, to prevent weight plateauing and major metabolic shifts that are actually not recommended in diabetes.
      Yes, the amounts can be adjusted, but it may not necessarily be required. Do you know the level of diabetic diets you have had in the past? What has your weight history been with them? How are your blood sugars now, and are you taking medications? Are you physically active at all?

      • I have just been diagnosed with diabetes and am trying to find a diet to follow. My physician hasn’t been helpful in providing diet information. My blood sugar ranges from 125-154 in the mornings. I do take medication called metformin. I have been told to “lose weight”, but never told how. I paid a dietician for advice and was put on a minimal fat diet. I lost 50 lbs., plateaued and gained it all back. I do go walking every day, but have been having leg pain lately, so my walks have decreased from 1 mile to about 1/3 mile.

    • Hi, Sue. It looks like you would be best served by using the personal version of the Menu Planner application, so that you can choose the specific foods that will go in your menu, and avoid the ones you don’t like. In addition, in the application you will see a long list of types of fish.
