I am lactose intolerant and can’t use real cheese. As a substitute I use soy cheese. According to the information I can not use soy based products. I use Lactaid daily and still have problems with lactose. Do you have any recommendations?
Hi, Marley. Instead of regular soy cheese, try fuyu, which is fermented soy cheese (soy is better if it is fermented or very well-cooked). Another type of “cheese” is vegan raw cheese, which is basically nuts that are soaked overnight and then pureed in some of the soaking liquid with a little lemon juice and whatever seasonings you like (most people choose garlic powder).
