Ingredients
Pizza Crust- 1 cup / 120 g whole grain flour, regular or gluten-free
- 1 tsp. / 5 g baking powder, preferably aluminum-free
- ¼ tsp. / 1½ g salt
- ⅔ cup / 160 ml tepid water
- 2 tsp. / 8 g active yeast
- 1 tsp. / 4 g raw sugar
- 1 tsp. / 5 ml olive oil
- ¼ cup / 60 ml tomato paste, preferably no-added-sugar/salt
- 1 Tbsp. / 2½ g or more fresh basil leaves, chopped or 1 tsp. / 1 g or more dried
- 1 Tbsp. / 2 g or more fresh oregano, chopped or 1 tsp. / 1 g or more dried
- 1 clove or more fresh garlic, minced or 1 tsp. / 3 g or more dried, granulated or powdered
- 4 oz. / 120 g cheese, grated, dairy or vegan
- ½-1 cup / 120-240 g vegetables of choice
Directions
- Brush or mist olive oil on the bottom of a lidded non-stick or cast iron medium-sized (8-9 inch / 20-23 cm) skillet
- Mix dough ingredients together in a bowl until uniform.
- Spread dough mixture evenly onto oiled bottom of skillet.
- Blend together pizza sauce ingredients, and spread evenly over dough mixture in pan.
- Sprinkle desired toppings over dough and sauce.
- Cover skillet tightly, and cook over medium-low heat for 5 minutes.
- Remove skillet cover slightly so that it allows steam to escape, and cook for an additional 10-15 minutes; the additional 5 minutes will result in a thinner, crispier crust
Delish, didn’t expect a lot from whole grain flour but boy was I wrong. I cooked this in a 10″ waterless electric skillet. Started cold set to 350 for 15 minutes and it was perfect.
Can I use dried yeast with this recipe?
As long as it is “active.”

If you use the personal version of the Menu Planner application (access it by clicking on the “My Food Choices icon in the toolbar above your current menu), you will see some of our recipes in the “Recipes” subcategory of each major food group. For newer recipes that have not yet been added into the system, you can use them to substitute for the main ingredient in your meal. You can also match up the exchanges visible at the end of each recipe and when you click on “Exchange mode” in the toolbar above your menu. It doesn’t need to be a perfect match to work.
I’m doing the 8 week plan and one day I have a pizza. lunch shows 4 ounces of pizza, plain cheese, regular crust, 1 serv of vegetable of your choice, 1 ounce of Pizza Toppings, and 1 Tbsp of Honey Mustard Dressing. Can I add tomato paste to the pizza crust or does that count as a serving of vegetable or 1 ounce of the pizza toppings?
Hi, chadwellt. The amount of pizza in your menu assumes some tomato paste, so no need to worry about extra exchanges.
My menu calls for 2 oz of pizza. Is the 1/4 of the recipe equal to 2 oz?
Hi, Connie. 1/4 of this recipe is 4 ounces. However, if you don’t have more than the suggested amount of cheese and vegetable toppings (without additional toppings), you can have the 1/4 as a meal.

We cooked it on the bbq, 300 degrees for the time it says on the stove top. The pizza came out delicious and the bottom wasn’t burnt. I would definitely add to favorites.

Hi, daseeling. You can try pureeing roasted red bell peppers and onions with garlic and fresh herbs to make a tomato-free pizza sauce.

The simple Pizza it says that it serves 4. That means it is for 4 people. I’m not sure if my husband would have enough with a quarter slize of this Pizza.

Hi, Christine. The “portion size” is actually a unit to make it easy to slip it into the menu – it doesn’t mean you are he are limited to it.
Is it possible to get this same dough ready made?
Hi, Jan. Not that I know of, though Trader Joe’s does carry regular ready-made pizza dough. The great thing about this particular recipe is that it is so quick, you don’t need to worry about that.

Hi, Christine. Yes, you can definitely freeze the dough. You can use any toppings you want in whatever order you want – we just put the tomato sauce first because it is the most commonly selected.
This would have been good if only I had used my common sense and baked it in the oven. Don’t try the hob version : it will burn!
