Ingredients
- 1 cup mixed Italian or baby greens
- ½ cup baby spinach
- 1-inch cube horseradish cheese, chopped
- ¼ small purple onion, chopped
- ¼ gala apple with skin, chopped
- 6 walnut halves, chopped
- 4 tsp. fat-free pomegranate vinaigrette or:
- 2 tsp. pomegranate vinegar + 2 tsp. olive oil
Directions
- Put 1 cup greens in bowl; add spinach.
- Add chopped horseradish cheese, onion, and apple.
- Sprinkle with chopped walnuts.
- Drizzle pomegranate vinaigrette/blend, and toss salad.
