Ingredients

  1. 1 cubed onion
  2. 2 cubed tomatoes
  3. 3 Tbsp / 45 ml olive oil
  4. 1 cubed zucchini
  5. 1 cubed bell pepper
  6. 3 Tbsp / 7½ gm chopped basil
  7. 2 whole skinless chicken breasts
  8. 2 boiled white potatoes
  9. 1 tsp / 2½ gm ground black pepper
  10. 1 Tbsp / 15 ml lemon juice

Directions

  1. Preheat oven on the "grill" or "broil" setting.
  2. In a bowl, place tomatoes, potatoes, zucchini, red bell pepper and onion. Drizzle 1 tablespoon / 15 ml olive oil and sprinkle salt and pepper. Toss well.
  3. Place coated vegetables on a baking sheet (preferably silicone or lined with silicone or baking parchment), and grill for 5 minutes. When grilled, remove from baking sheet and set aside.
  4. In a bowl, add remaining olive oil, salt, lemon juice and pepper. Mix well.
  5. Add the breast pieces to the mixture, and refrigerate for 20 minutes.
  6. Place marinated chicken on baking sheet, cover with baking parchment, and cook for 7-8 minutes on each side.
  7. Chop grilled vegetables and put them in a bowl with basil, salt and pepper. Toss well.
  8. Place chicken and vegetables into the platter and serve.

  1. I guess the potatoes are cubed also? it’s hard to tell, since the picture shows no cubing at all. I find the pictures to show different from the actual recipe on several I’ve tried so far, or just reading the recipe it’s different.
