Ingredients
- 1 medium (3-inch / 7½-cm) beetroot, grated
- ½ cup / 120 ml almond meal
- ¼ cup / 60 ml aquafaba (chickpea liquid)
- 1 tsp / 5 ml concentrated liquid smoke or 1 Tbsp / 15 ml light liquid smoke
- ¼ cup / 120 ml herbs and spices of choice (smoked or regular paprika, black pepper, plus garlic, rosemary, and thyme; or salt-free blend of choice)
- 3 Tbsp / 15 ml olive oil
Directions
- Preheat oven to 50°C / 120°F. Line baking sheet with parchment paper, preferably unbleached. Brush evenly with 1 teaspoon / 5 ml olive oil.
- Blend ingredients together.
- Form 1-tablespoon / 15 ml balls of the mixture, flattening each onto the parchment paper to disks measuring about 2 inches / 5 cm across and ⅛ inch / ⅓ cm thick.
- Place on middle rack in preheated oven. Bake for 1 hour, flip, and bake for an additional hour.
Can be frozen and reheated.

Hi Ossie, My name Is Bobbi. I have had some health problems in the past 1.5 yrs. they had to do a bypass on a vascular in my leg. I was 73 yrs old was I started having health problems, I always tried to take of myself.
I was going to the gum anywhere from 3 to 5 days a wk. I also thought I was eating right but I was getting the wrong information. I heard about the keto diet and then I saw the trimdownclub site. I am a new member and there are a few things I don’t understand. Like, the exchanges and another thing I heard Canola Oil was bad for your body. The recipe in the link calls for Canola Oil for aquafaba.

Hi, Bobbi. An exchange is a building block for a menu that contains an approximate set of nutritional values based on the corresponding food group. The exchange system is used by nutrition groups around the world to make menu planning easy and to ensure that nutritional needs are met. The following are the general nutritional values of each of the exchanges:
1 carb exchange = 15 grams of carbohydrates + up to 3 grams of protein
1 protein exchange = 7 grams of protein + up to 5 grams of fat
1 fat exchange = 5 grams of fat
1 fruit exchange = 15 grams of carbohydrates
1 vegetable exchange = 5 grams of carbohydrates + up to 2 grams of protein

With regard to canola oil, if it is organic, cold-pressed, and unrefined, it is considered to be a good cooking oil – more omega-3 and omega-9 than omega-6. While olive oil is considered better, the latter has a stronger flavor that doesn’t suit all recipes; canola has a more neutral flavor.

An alternative to almond meal would be a combination of whole wheat bread crumbs (the same amount as the almonds) plus olive oil (5 teaspoons or 25 ml).
