    I enjoy making candy, banana, cherry nut and fruit cake for family and friends at this time of year. If I make them sugar free. Can I eat any of it and if so about how much? I am a diabetic and have family who is also. I have looking for and found some sugar-free recipes. And they use a lot of the same kind ingredents that are used in the TDC. Thank you for all the help.

    Hi, Connie. Good for you! First, whether or not you can eat it comes down to portion size – even the worst things can be enjoyed once in a while in small amounts. Second, the amount you can eat depends on two things: (1) the ingredients – for example, if they are sugar free, what sweeteners are you using? Flours? (i.e., are they whole grain?) What oils? – and (2) what other things are you eating and what are those amounts?
    If you would like to outline the typical amounts and types of holiday food you encounter during a typical December day, I would be happy to given you a sample template to work with (with some wiggle room, of course). Note that keeping physically active this type of year is just as important as all of the above.

    The candy all use cocoa butter, unsweetened coconut, unsweetened baking chocolate, Swerve, stevia extract powder, tapioca starch, Sugar free chocolate chips, and some call for honey. The bread I am not sure what flour to substitute for plain flour. What would you subject?

    Hi, Connie. The candy looks fine, of course! As for the flour, any whole grain would be OK – whole wheat is the easiest, but if you need gluten-free, there are whole grain blends around that are prepackaged for convenience.
