    I develop software for a living and don’t always have a lot of time to cook. So I’m trying to maintain a healthy diet now (like the one’s here).

    I recently read the benefits of coconut oil for weight loss and thyroid improvement so I’m adding 2 tblspoons daily and I have to say, it’s great as it makes me feel full for quite a long time.

    A few times a week, I quickly throw some coconut oil in the skillet and dump “pre-chopped veggies from the store(as I’m lazy to do a ton of chopping, etc..)” into the skillet along with mushrooms and … Wow!! Sprinkle a little himilayan pink salt in there along with a few cloves of garlic and fresh ground pepper and what a great tasting meal that leaves me full for hours (thanks to the coconut oil).

    Can anyone else share their quick/healthy meals for when they don’t have much time?

    Another “lazy me”-thing I did was to get something like this (at Walgreens)

    and you can microwave 2-3 eggs in there. So I crack 2-3 eggs in there and then dump more chopped veggies (from store bought bag) like ground califlower/brocolli/roasted peppers and it gives you a nice low cal omlette that (I think) can pass as healthy here.

    And if I’m really really lazy/hard pressed for time, I may take 2-3 slices of sprouted grain bread (Ezekeil) and dip it in Olive oil (or more recently) or Coconut oil that’s on a plate and eat an apple/fruit afterwards. I can make a meal out of that. I got that idea from the Macaroni Grill where they will bring out a loaf of bread with olive oil and let you dip your bread in it while they give you the menu.

    i’d like to hear other folks’ ideas as I’d like to use some of them.

    I forgot to add, I also put 1-3 cloves of Garlic in the skillet with the mushrooms/veggies. Can’t really taste it with the other veggies but I know I’m getting the garlic benefits
