Ingredients
- Pie crust
- ¼ cup / 60 ml organic canola, macadamia nut, or hazelnut oil
- ¾ cup / 90 gm quinoa flour
- ½ tsp. / 3 gm salt
- ½ tsp / 2½ gm baking powder
- 2 Tbsp. / 30 ml organic grass- or pasture-raised or vegan milk
- Pie Filling
- 2 cups / 660 g cooked and mashed sweet potatoes (from 4 medium sweet potatoes)
- 2 Tbsp. / 60 ml organic canola or macadamia nut oil
- 2 omega-3 or grass-fed eggs, beaten or 1 Tbsp / 7½ gm vegan egg substitute, dissolved in ¼ cup / 60 ml water
- 1 cup / 200 g xylitol or inulin/chicory root sweetener or
- 2 Tbsp. / 6 g Stevia or monk fruit sweetener
- or combination
- 1 tablespoon / 7½ g 100% whole grain flour or 2 tsp. / 5 g potato flour
- ½ tsp. / 3 g salt or salt substitute
- ½ cup / 120 ml buttermilk or ½ cup / 120 ml organic soy milk mixed with 1½ tsp. / 7 ml apple cider vinegar or lemon juice
- ¼ tsp. / 1 g baking soda
- 1 tsp. / 4 g vanilla extract
- ½ tsp. / 1 g ground nutmeg (optional)
- ½ tsp. / 2 g ground cinnamon (optional)
Directions
- Coat 9-inch / 23 mm pie pan with nonstick cooking spray.
- Mix together oil, quinoa flour, salt, and baking powder until evenly blended.
- Add the milk, and mix until evenly blended.
- Place mixture into prepared pie pan. Using your fingers, press the pie dough down into an even covering along the bottom of the pan and up the sides.

- Mix together mashed sweet potatoes, oil, and eggs or egg substitute.
- In a separate bowl, mix together xylitol, flour, and salt/substitute. Mix in spices if desired.
- Add to sweet potato mixture and stir well.
- Mix together buttermilk and baking soda. Add to sweet potato mixture and stir well.
- Mix in vanilla extract. Pour filling into prepared pastry shell.
- Bake in preheated oven for 70 minutes, until set in center.

Yes, canola is a frequently GMO product, which is why it is very, very important to buy only organic canola (or low-erucic rapeseed), or at least a product that specifically states that it is not GMO. It is included as an option because it is tasteless, and some people are very sensitive to all additional tastes in recipes.

What is xylitol ?
Xylitol comes from Scandanavia, and it’s usually found in gum that says its healthy for your teeth. Try looking in health food shops or order it onlne.

This recipe absolutely could be converted to a “tart” size for fewer servings. Single serving ingredients:

1 Tbsp. buttermilk or 1 Tbsp. soy milk mixed with
1/8 tsp. baking soda
1/8 tsp. vanilla extract
Dash ground nutmeg (optional)
Dash ground cinnamon (optional)
The pies freeze very well.

Done it ….delicious!!!!!
I don’t follow the recipe, I see or or or then in the directions buttermilk and soda is added to the potato mix.Am I correct to think the main recipe is mashed potato, butter and eggs .I was going to cook this now but I’ll wait for advice as I don’t want to wreck it by not adding buttermilk and baking soda if it’s required.

could this recipe be converted to a tart size?
Is there anything allowed in addition to this dish. Should I have fruits, vegetables, something to drink…water, diet soft drink,…..or should this pie be the only thing I could eat at this meal?
Does this freeze as the recipe is for around 8 people and I am the only one eating it!
