MemberI want to make Thai Peanut Noodles, however I am unsure how to break this down for my meal planner. It has been quite awhile since I have used Trim Down Club and I now cannot recall whether I have asked these questions before.
I can find peanuts in food choices, but I do not see peanut butter. The peanut butter I want to use (Trader Joe’s Organic Crunchy Unsalted) lists unsalted peanuts as the ONLY ingredient. While I normally (off-‘diet’) make this with chicken & peanut butter, I am currently out of chicken. So my main interest now is in how much peanuts & peanut butter to add to get the protein to the right amount. However, I need to know how much to use for when I do have chicken to add. My preference for this recipe (by taste) is 2 tbsp of peanut butter with an additional small handful of peanuts (about 1/8 cup). To which I usually add about 1 oz of chicken – using all those together as the protein. I unfortunately do not see a way to arrange the meal planner to use a combo of proteins.
I’d also like to know about upping the veggies. I ‘normally’ make this with Trader Joe’s ‘broccoli slaw’ which is just broccoli (predominately) and carrots (considerably less) shredded/grated. I see that 3/4 of a cup of these veggies count as a 1 cup serving, however I do wonder if the amount must be adjusted since it seems as if I could fit quite a bit more veg into that 3/4 cup if they are shredded.
Additionally, I intend to make this with a combo of spaghetti squash ‘noodles’ with zucchini noodles (spirals) I did see zucchini in the 1 cup serving list, but I do not find spaghetti squash in the starchy veg list. Is it considered a winter squash? If I want to use a combo of these veg instead of whole grain noodles I am unsure of the quantities. My normal inclination would be 3/4 cup spaghetti squash + 1/4 cup zucchini spirals. I know the zucchini is not a starch, but could it fill-in as part of one? If not, is it ‘wrong’ to use a lesser amount of carb and make up the quantity with a small amount of extra veg serving?

MemberH, hwyla. Each tablespoon of peanut butter or 1.5 tablespoons of peanuts can be swapped in as a protein exchange, instead of an ounce of any meat (or chicken, in your case). In the Menu Planner food lists, peanut butter is included in “Nut Butter.” Regarding the vegetables, if you use squash/zucchini noodles instead of starchy types, you can add extra servings of vegetables.
