Ingredients
- 1 lb. / 450 g fish fillets
- 2 chopped onions
- ½ cup / 8 g fresh cilantro/coriander
- 3 cloves fresh garlic, chopped
- 1 tsp cumin seeds
- 1 Tbsp / 7 g ground black pepper
- 1 Tbsp / 14 g ginger paste
- Salt to taste
- 4 Tbsp / 60 ml grapefruit juice
- 6 medium tomatoes
- ½ cup / 120 ml water
Directions
- Mix grape fruit juice and ginger paste. Coat fish with the mixture and marinate fish foe 10 minutes.
- Wrap fish with foil paper and bake for 10 minutes at 170°F / 75°C. Remove fish and set aside.
- In a pan add tomatoes, onion, cilantro/coriander leaves, ground black pepper, salt, garlic cloves and half cup of water. Let it cook for 5 minutes.
- Blend them together with the help of hand blender.
- Place fish fillet in serving platter and pour the blended sauce onto it.
- Garnish with coriander leaves and serve with brown rice.
