    I never thought about it before. We Ate what we wanted. Meat suggestions for both would be great to put us on the right track.

    Hi, Brenda. “Cured” means that artificial nitrites and nitrates are added to the foods to preserve them and give them a characteristic flavor that we identify as processed (as in ham and bacon). “Uncured” means that either nitrites and nitrates are not added at all, or their source is natural. Meats that are uncured are clearly labeled as such. Cured meats are not recommended, as they have been associated with increased cancer risk.

    I noticed on the menu ham is listed; I thought all ham was cured
