Ingredients

  • Raw Egg, 3 egg (129 g)
  • Butter, No Salt, 1 tablespoon (14 g)
  • Heavy Cream, 0.25 cup (58 g)
  • Chives, 1 tbsp chopped (3 g)
  • Sea salt, 1 dash (0 g)
  • Black Pepper, 1 dash (0 g)
  • Salmon, Smoked, 5 slices (100 g)
  • Arugula, 1 cup (28 g)
  • Avocado, sliced, 1 avocado (158 g)
  • Olive Oil, 2 tablespoon (27 g)

Instructions

  1. In a mixing bowl, whisk the eggs .
  2. Melt the butter in a pan (medium heat) and then add the eggs and the cream and continue stirring it.
  3. Let it cook over low heat for 4-5 minutes while stirring continuously until it gets creamy.
  4. Remove from the stove, add chopped chives, salt, and freshly ground pepper. Serve with a few slices of smoked salmon, sliced avocado and fresh arugula.
