Ingredients

  • Strawberries, 2 ounces (56 g)
  • Spinach, 1 cups (29 g)
  • Romaine Lettuce, 3 leaf outer (84 g)
  • Goat Cheese, 3 oz (85 g)
  • Olive Oil, 2 tablespoon (30 g)
  • Balsamic Vinegar, 1 tbsp (16 g)
  • Table salt, 1/3 teaspoon (1 g)
  • Pecan nuts, 5 Tablespoons (50 g)

Instructions

  1. Place the spinach and the lettuce in a salad bowl.
  2. Cut in pieces the strawberries, the cheese and the pecan nuts. Place them on the greens.
  3. Season with olive oil, vinegar, salt and pepper. Mix well but carefully.

    • Hi, RobbieMills the amount of carbohydrates for one serving of the recipes is 9 grams, and from the strawberries alone 2 grams. If you have a 5-ounce glass of dry wine with the meal, then eat 1/3 of the recipe, rather than 1/2.

  1. Is it ok to use infused flavor olive oils? I buy a lot of citrus and herb infused olive oils, but I don’t think there is enough citrus (lemon, lime, orange and even grapefruit) to cause an issue but wanted to be sure.

    I love this salad with my orange, rosemary and thyme infused oil and balsamic vinegar.

  2. I honestly didn’t think I would like this recipe as I have never cared for spinach. I have also never eaten goat cheese. I was quite surprised at lunch today when I ate this delicious salad. I enjoyed the little bit of fruit, whcih I don’t get much of on keto, low carb plans
