Ingredients
- Ground Beef 85/15, minced, 1 pound (454 g)
- 1 egg (43 g)
- 1/2 onion, small (30g)
- Coconut Oil, 1 tbsp (13 g)
- Almond flour, 1/2 cup (8 g)
- Almond Milk, 2 tablespoon (42 g)
- Chicken Stock, 1 cups (243 g)
- Garlic, 2 garlic clove (8 g)
- Coconut Milk, 1 cup (227 g)
- Lime, 1 medium (66 g)
- Cinnamon, 1 tsp (3 g)
- Turmeric, 1 tsp (2 g)
- Ginger Root, grated, 1 tablespoon (7 g)
- Hot Chili Peppers, 1 tsp (3 g)
- Lemongrass, 1 stalk (white part only)
- Salt, to taste
Instructions
- In a bowl, mix almond milk with almond flour
- Add minced beef and salt to the almond paste.
- Juice the lime, and grate the peel to make zest.
- Chop garlic and onion and cook them in a pan with oil over low heat until translucent.
- Add garlic, onion and the egg to the beef mixture and mix with hands.
- Prepare meatballs (diameter = 2 inches approx.)
- In the same frying pan, brown the meatballs (all sides) adding, at the same time, lemongrass, chili peppers, ginger, the lime juice and zest, turmeric and cinnamon.
- Add coconut milk and chicken stock, mix well and simmer for 15 minutes.
- Before serving make sure the insides of the meatballs are well-cooked.

Is the cocunut milk the canned type or the carton(like almond milk)?

Hi, Toya. You can try any other nut or seed flour, or even coconut flour (1/3 the almond amount, plus an extra egg).
I like the idea but there are several things missing in the recipe that would make it easier to understand. First, there is no salt amount listed in the ingredients, but it is listed in the directions. The same goes for the onion. How much of each?
The ingredients list lime zest, but the directions call for lime juice, how much? both?
Lemongrass, is new to most of us, do we use the stalk, chop fine and add or what? Could we add an egg to the meat mixture in addition to the almond flour to make the meatballs hold together better?
Hi, Jkesl. Salt is “to taste,” and the onion amount is 1/2 small (35 g). Both the juice and zest of 1 lime should be added. With regard to the lemongrass, you can chop one stalk to the length you want – some people like 2-inch (5-cm) pieces, and others like 1/4-inch (1/2-cm) pieces. As for the egg, that’s a great idea. I will update the recipe team with your suggestions.

Hi, 5509Bay. The recipe is intended to be the majority of the meal. If you want, you can add to it “free” foods like konjac rice or pasta (also known as shiritaki or “Skinny”), as well as very low-carbohydrate vegetables like salad greens, cucumber, turnip, kohlrabi.
Can you substitute the ground beef for turkey?

Hi, Mei2020. Soy crumbles have almost no fat in them, so they would require additional adjustment of the recipe to keep it keto-supportive and not falling apart. You could dissolve 1 cup of granules in an additional cup of broth or more to get the right texture (can be vegetable broth), then add an egg to the mixture, and use three tablespoons of coconut oil instead of one. If you don’t want to use egg, you can use 2 tablespoons of freshly ground flaxseeds, mixed with a little extra broth before adding to the primary mixture. Note that the recipe will then make 2 servings instead of 3, and have 19 grams of carbohydrate per serving instead of 11 (the other nutritional values will be very similar to the current ones).
Other than that, other fatty ground meats and seafoods are fine – lamb, goat, salmon, tuna, etc., and can be used in a one-to-one ratio.
