Ingredients
- Asparagus, Fresh, 2 lb (908 g)
- Heavy Cream, 1 cup (233 g)
- Butter, No Salt, 2.5 tablespoon (35 g)
- Chicken Stock, 1 cups (243 g)
- Garlic, 1 garlic clove (4 g)
- Parsley, 2 Tablespoon (8 g)
- Table salt, 1/3 teaspoon (13 g)
- Black Pepper, 1/2 tsp, ground (1 g)
Instructions
- Clean the asparagus, trim the ends and cut into 1" pieces.
- In a heavy pot, melt butter. Add garlic and cook for 1 minute.
- Add asparagus, salt and pepper, and cook for 5 minutes or until the asparagus turn golden.
- Add broth and simmer over low heat, covered, until asparagus is tender but still green, (10-15 minutes).
- Remove from the stove and with a blender mix the asparagus until smooth.
- Add the asparagus back to the pot, add the heavy cream and stir until hot.
- Add salt and pepper to taste and garnish with parsley.
