Ingredients
- Lamb, ground, minced, 1 pound (437 g)
- Coconut Oil, 2 tbsp (26 g)
- Spring Onions (Scallions), 1 large (25 g)
- Coconut Cream, 1/2 cup (120 g)
- Garlic, 1 garlic clove (4 g)
- Lemon, 1 Zest (2 g)
- Table salt, 1/3 teaspoon (2 g)
- Black Pepper, 1/3 tsp, ground (1 g)
- Peppermint, 1 tablespoon (5 g)
Instructions
- Chop the scallion and zest the lemon.
- Prepare the sauce (better with a blender), mixing coconut cream, lemon zest, salt and pepper (to taste) and set aside.
- In a pan, cook the scallion and the garlic clove in half of the coconut oil until translucent (3 minutes approximately).
- In a bowl, combine the minced lamb, salt, parley and mix. Then add the scallion and garlic and mix again.
- Prepare the meatballs with your hands.
- In a skillet, warm the remaining coconut oil and cook the meatballs, each side for 5 minutes approximately or until ready.
- Serve adding the sauce and chopped mint on the meatballs.
