Ingredients

  • Boiled Eggs, 4 (260 g)
  • Green Beans, Fresh, steamed, 4 ounces (112 g)
  • Anchovies, 8 anchovies (32 g)
  • Olives, 1 cup pitted and chopped (100 g)
  • Capers, canned, 4 tablespoons (32 g)
  • Garlic, 3 garlic clove (12 g)
  • Oregano, 1 teaspoon (3 g)
  • Table salt, ⅓ teaspoon (1 g)
  • Black Pepper, ½ tsp, ground (1 g)
  • Egg, raw
  • Lemon Juice, 6 tablespoons (90 g)
  • Dijon mustard, 1½ tsp (8 g)
  • Olive Oil, 6 tablespoons (90 g)
  • Radish, sliced, 4 medium (¾-1 inch or 2-2½ cm diameter) (18 g)
  • Red onion, chopped, ½ small (35 g)
  • Tomato, chopped or 4 cherry tomatoes, 1 tomato (124 g)
  • Goat Cheese, 4 oz (113 g)
  • Romaine Lettuce, 4 leaf inner (24 g)
  • Tuna canned in oil, 1 can (170 g)

Instructions

Dressing:  
    1. In a bowl with the help of a fork make a paste combining anchovies, garlic, oregano, salt and pepper.
    2. Whisk in the raw egg with a metal whisk until well blended. Add lemon juice and mustard.
    3. Add the oil and whisk until the emulsion is thick.
    4. Add the chopped onion, capers and mustard. Whisk until blended.
    5. Add salt and pepper, to taste.
Salad:  
      1. Wash, dry and cut the lettuce leaves.
      2. In a bowl, add:lettuce, tomatoes, green beans, onions, radish.
      3. Slice the hardboiled eggs and add them to the bowl.
      4. Drop the tuna evenly.
      5. Drop olives, tomato and goat cheese evenly around
      6. Pour dressing over generously

    • Hi, Ilady. To replace the anchovies, use two artichokes hearts jarred in oil. However, you can add three more of these if you replace the tuna with 4 ounces of grilled chicken with skin; you will also need to add another tablespoon of olive oil to keep it keto-supportive.

  1. can i sub this for a grilled chicken salad or something to may things i do not eat
    like olives anchovies radishes and green beans.. can i do a salad with all the other veggies let tom onion add egg with chicken or another protein like shrimp with a Italian or balsamic dressing. the dressing with the raw egg doesn’t seem too appealing to me

    • Hi, Yolady. For the most part yes, but take care that the total fat content does not get too low, or it will no longer be keto-supportive. Substituting with chicken or shrimp is fine, but using more tomatoes and onions to replace the radishes and green beans may be iffy – try lower-carb options like cucumber, celery, zucchini (courgette), and salad greens. Raw egg in the dressing is not a requirement.

      Meanwhile, I encourage you to refrigerate or freeze any leftovers for later reheating, for when someone is in a hurry or needs to pack a meal.

You can get the foods you noted at health-oriented stores like Whole Foods Market and Trader Joes, and even some big box stores like CostCo, Target, and Walmart; you can also order them online from Target and Amazon.
