Ingredients

  • Halloumi cheese (or "halloumi-like" or "grilling" cheese), 1 package (200 g)
  • Walnuts, 2 cup shelled (50 halves) (200 g)
  • Olive Oil, 3 tablespoon (45 g)
  • Arugula or rocket, 1 cup (28 g)
  • 4 cherry tomatoes (121 g)
  • Table salt, 1/3 teaspoon (1 g)
  • Black Pepper, 1/3 tsp, ground (1 g)
  • Cucumber, 1 Cucumber (10 - 12 cm) (200 g)
  • Lemon, 1 fruit (2-1/8" dia) (58 g)

Instructions

  1. Thickly slice the cheese.
  2. Heat a frying pan over a high heat and cook the cheese in batches for a minute on each side until golden. In alternative, you can grill it for 3-5 minutes each side.
  3. Cut the cherry tomatoes in half and slice the cucumber.
  4. Place in a bowl the cooked halloumi, the arugula leaves, cucumber, tomatoes, olive oil and lemon. Season with salt and pepper to taste. Mix well.

      200 mg firm tofu
      Coated with 1 beaten egg (preferably omega-3)
      and 1/4 cup almond flour or meal
      Use an extra 1 tablespoon of olive oil for dressing

      Total sodium: 102 mg (25.5 mg per serving)

  1. hi…..short of doing the calculations ourself, is there a way to change the recipe to reflect single portions….annoying if you live alone and want to make single portions of things to have to change the recipes for so may dishes. I know on some recipe sites, there is a recipe conversion tool that will do that …change portion size and thereby changing the recipe automatically
