Ingredients
- Garlic, 2 garlic cloves (8 g)
- White wine, 3/4 cup (173 g)
- Heavy cream, 1 cup (233 g)
- Lemon, 1 zest (2 g)
- Parsley, 1 tablespoon (4 g)
- Chives, chopped, 1 tablespoon (3 g)
- Cod Fish, 2 fillets (462 g)
- Cauliflower, 1 head small (265 g)
- Ghee, 3 tablespoons (43 g)
- Cheddar cheese, shredded, 1/2 cup (57 g)
- Nutmeg, 1 tablespoon (7 g)
- Table salt, 1 teaspoon (5 g)
- Spring Onions (Scallions), 1/2 cup (49 g)
- Sour Cream, 1/2 cup (108 g)
- Broccoli, 1 lb (450 g)
Instructions
- Preheat oven to 400°F/200 °C
- Cut the cauliflower and the broccoli into florets and steam until soft. Drain thoroughly
- Add the softened ghee, sour cream, cheddar cheese, chives, grated nutmeg and salt in a food processor and process until smooth
- In a frying pan, heat the olive oil then add scallions and garlic and stir for a couple of minutes.
- Add the white wine and reduce by half (2-3 minutes).
- Add heavy cream, lemon zest, and herbs and simmer for 5 minutes.
- Add salt, to taste
- Put the fish fillets in an oven tray and pour over the sauce
- Spread the broccoli and cauliflower mash on top evenly.
- Bake for 30 minutes or until the top is browned
- Sprinkle with some fresh parsley and serve.

I cant use diary products… what can I use instead?
Hi, kikiextreme. You can use full-fat vegan versions – coconut is best, especially canned coconut milk and cream for cooking.
Can I us something other than wine?
Hi, Nancy1973. The wine is just for seasoning, so an herb or spice of your choice would be fine.
