Ingredients

  • Ground turkey, 1 1/4 lb (566 g)
  • Tomato puree, 1/3 cup (87 g)
  • Egg, 1 egg (43 g)
  • Almond meal, 3 tablespoons (30 g)
  • Salt, 3/4 teaspoon (4 g)
  • Black Pepper, 1/2 teaspoon (1 g)
  • Butter, unsalted, 2 tablespoons (28 g)
  • Garlic, 3 garlic cloves (12 g)
  • Mushrooms, Fresh, 1/2 cup, pieces or slices (35 g)
  • Sauce, worcestershire, 2 tablespoons (34 g)
  • Bacon, 4 slices (104 g)
  • Spring Onions (Scallions), 2 green onions (24 g)
  • Cheddar cheese, 4 slices (4 oz) (112 g)

Instructions

  1. Chop mushroom, garlic and scallion.
  2. Preheat oven to 350°F (175°C).
  3. In a skillet, melt the butter over medium-low heat and then add scallion, garlic and mushrooms. Cook for 5 minutes, stirring.
  4. Turn off the heat and add the Worcestershire sauce. Set aside.
  5. In a bowl, combine thoroughly ground turkey, tomato puree, the egg, almond meal, salt, and black pepper.
  6. Add the mushroom mixture to the meat one and mix.
  7. Add half of the meatloaf mixture to a loaf pan and spread it across the bottom of the pan with the back of a spoon or other tool.
  8. Add a layer of bacon and one of cheese to the loaf pan. Cover it with the other half of the mixture.
  9. Bake for 60 minutes.

    • Hi, Debra2020. There should be enough drippy fat in the mixture so that you don’t need to grease the pan. If you want to grease it, two teaspoons of olive oil should be enough, and won’t significantly affect the calorie count.
