Ingredients
- Garlic, 2 garlic cloves (8 g)
- Almond flour, 1 tablespoon (14 g)
- Lemon, 1/4 Zest (1 g)
- Nutmeg, 1/4 (1 g)
- Salt, 1/4 teaspoon (1 g)
- Coconut milk, 1 1/4 cup (284 g)
- Spinach, 5 oz (140 g)
- Olive oil, 2 tablespoons (30 g)
- Spring onions (Scallions), 2 green onions (24 g)
Instructions
- Warm the olive oil in a skillet, then saute the scallion and the garlic.
- Reduce the heat and add almond flour, lemon zest, salt, grated nutmeg and combine.
- Gradually add the coconut milk while stirring.
- Add the spinach, stir and cover for about 4 minutes. Remove the cover and stir until well mixed. If you like a creamier texture, process all ingredients in a blender.
