Ingredients

  • Garlic, 2 garlic cloves (8 g)
  • Almond flour, 1 tablespoon (14 g)
  • Lemon, 1/4 Zest (1 g)
  • Nutmeg, 1/4 (1 g)
  • Salt, 1/4 teaspoon (1 g)
  • Coconut milk, 1 1/4 cup (284 g)
  • Spinach, 5 oz (140 g)
  • Olive oil, 2 tablespoons (30 g)
  • Spring onions (Scallions), 2 green onions (24 g)

Instructions

  1. Warm the olive oil in a skillet, then saute the scallion and the garlic.
  2. Reduce the heat and add almond flour, lemon zest, salt, grated nutmeg and combine.
  3. Gradually add the coconut milk while stirring.
  4. Add the spinach, stir and cover for about 4 minutes. Remove the cover and stir until well mixed. If you like a creamier texture, process all ingredients in a blender.
