Ingredients
- Chicken breast, 2 chicken breasts (216 g)
- Bacon, 4 slices (104 g)
- Coconut Milk, 1/2 can (225 g)
- Mushrooms, Fresh, 1 cup (70 g)
- Green Beans, fresh, 1/2 cup (54 g)
- Spinach, 1 cup (29 g)
- Red wine vinegar, 1/2 tbsp (7 g)
- Black Pepper, 1/2 teaspoon (1 g)
- Salt, 1/2 teaspoon (3 g)
- Spring Onions (Scallions), 1/2 cup (49 g)
Instructions
- Dice the chicken breasts, chop the mushrooms, scallions.
- Cook the bacon over medium heat, then put it aside leaving part of the fat in the pan (1-2 tablespoons).
- Add scallion to the same pan and cook for a couple of minutes, then add the chicken and cook for about 5 minutes, stirring.
- Add the green beans and the mushrooms and cook for another 2-3 minutes.
- Slowly pour the coconut milk, add the bacon, the spices, and the vinegar, stir and let cook for 10 minutes at a lower heat.
- Add the spinach and stir until well combined (around 2 minutes).

If it calls for string beans in any recipe is it calling for fresh only or can frozen or canned be used. I don’t see a notation or a specific in the recipes in my menus.
