am i aloud to add olive oil to cook the eggplant?
Hi, JoeJoe40. You can use up to one teaspoon of olive oil without counting it as a fat exchange. If you use more, just omit another food in the fat category. To see what makes for a fat exchange, you can click on the “Exchange View” button above your menu. If you are referring to the “Eggplant, Roasted or Sauteed” item in your Sunday dinner menu, note that it already includes the option of oil – so yes, you can cook it in olive oil.
