Ingredients

  1. 1 lb / 450 g white, sweet, or purple potatoes, thinly sliced
  2. 1 cup / 90 g broccoli chopped
  3. 3 omega-3 or grass-fed/pasture-raised eggs (optional)
  4. 1 large tomato, chopped
  5. 2 tsp. / 10 ml olive oil
  6. 1 medium yellow or red onion, diced
  7. ½ cup / 120 ml organic grass-fed or vegan milk (unflavored)
  8. 1½ tsp. / 5 g whole brown rice flour or kudzu root dissolved in 1 Tbsp. / 15 ml water
  9. ½ cup / 120 g organic and/or grass-fed cottage cheese (optional)
  10. ½ cup / 120 g organic, grass-fed or vegan meltable cheese, grated

Directions

  1. Preheat your oven to 350°F / 180°C.
  2. In a flat baking dish, arrange the potatoes in a neat layer and top them with the chopped broccoli.
  3. If desired, whisk the eggs in a bowl and season with pepper and salt to taste, then pour onto the potato layers. Add the chopped tomatoes.
  4. In a saucepan, melt the butter or heat the oil over medium heat. Add the onion and sauté for about 3 minutes until skin turns translucent.
  5. Stir in the milk and flour or kudzu mixture; cook for 2 minutes, then add the cheese. Stir to blend well.
  6. Turn off the heat and pour this mixture over the potato, broccoli, and tomato layers.
  7. Place the baking dish in the preheated oven, cover with foil, and bake for approximately 55* minutes.
  8. Let stand for 10 minutes or so before serving.
*For less baking time, steam the potato slices for 5-10 minutes before placing them in the baking dish. Bake with the toppings for 15 minutes. Serving Size: 1½ cups / 340 ml Exchanges per Serving: 1½ Carb, 1½ Protein, ½ Fat, 1 Veg

  1. Hi, Ian Edwards. No, the recipe doesn’t cover the extras – they are there to meet the rest of your nutritional needs, and the system selects them to be something you can incorporate into the recipe if you wish. If you feel it is too much for you, then just skip it.

  2. I am a little confused as this recipe is only part of the lunch menu for the day, there is also 30g of hard cheese, 1 cup of aubergine and 1tab of honey mustard dressing. Does the recipe replace the extras or is it as well….it is too much to eat. Dawn

  3. I slightly adapted this recipe and used sweet potatoes instead of white potatoes. I also added extra broccoli and some cauliflower and substituted the rice flour with spelt flour. The result was extremely tasty and filling. Great recipe which I’ll certainly look forward to eating again.

  4. I tried this recipe, it was very nice…
    I sliced the potatoes very thin but still I needed to cook this dish in the oven for 1 hour and 10 mins…
    I also doubled the recipe and found it was the right amount for 6 people…
    I found 45gr of broccoli didn’t look much so I put a whole head of broccoli florets in totalling 200gr (7oz), the eggs were optional but I still only put in 3…
    After 1 hour in the oven it still wasn’t ready and with all the cheese it looked a bit greasy so I removed the foil and put it back in the oven for a further 10 mins…

    On another occasion I cooked this dish again but this time I used less cheese and I put some dry breadcrumbs on the top to absorb any excess oil from the melted cheese and I had ran out of foil…
    The verdict was, if I want to use breadcrumbs then I don’t need to reduce the amount of cheese because it was a bit dry this time round… There was no problem without using foil on the top, that seemed fine…
    Next time when I try it, I’m going to dice the potatoes into small cubes and par boil them first for 3 mins so then i’ll only need to cook the dish in the oven for about 45 mins…
    I served it with home baked ham from my slow- cooker (croc-pot) and salad…
    Everybody loved it…!!!

  5. how do we know the carb, protein, fat, etc. content for this recipe and other recipes on your website. There are times I would like to substitute this recipe for something else on the menu history and I am unable to because A) it’s not available on the food choice options B) I don’t know the carb, protein, etc content to make the switch.

  6. This recipe is one of the best I have tried I put mushrooms in it when frying the onions my family eat it all and said make it again I cook the potato first in the microwave which made it quicker to cook about 40mins very yummy

  7. To all asking about substitutes for raw dairy – the recipe has been upgraded to include the organic low-fat option.
    To all asking for British units, these have been added, too.
    For those citing the watery consistency, the fluid content has been decreased.

  8. When you say add the cheese, do you both the cottage and the raw together? I just put the cottage cheese on top of the whole casserole, because it was too ate, then put it in the oven, we’ll see how it comes out…lol!

  9. Please leave the American measurements as well as putting in european measurements…some of your other recipes contain both versions of measurements. Trying this tomorrow. This will probably freeze well if there is only two people, I am just going to pre measure for future servings, thaw and rebake.

  10. Would prefer recipes for smaller quantities. It’s a fiddle to work out how much 4oz means when the recipe serves 9-16 people. Also would prefer metric (as we mainly use in the UK) for quantities and temperatures and measurement that are not in cups. I have cup measures but many ingredients are not easily measured in cups.My American mother would say exactly the opposite so it’s what you’re used to that counts I suppose!An alternative would help your British slimmers please!

  11. I followed the instructions, but I really did not like it. It was way too watery for me. I will try it next time with less milk and see how it works. Maybe try it with some other free vegetables like mushrooms. Hang in there every one. xxx

  12. Very Tasty, but not good to look at. Too pale and watery when following the recipe exactly. I would mix the cottage cheese with the milk mixture and sprinkle the top with the cheese. Bake without the foil on top and it should be great.

  13. I like the sound of this. You can buy cups from ebay which makes this diet plan much easier. I shall use regular milk as I can’t get raw milk and organic products are too expensive. I am a pensioner on a limited income.
