Ingredients

  1. 4 tsp. / 20 ml olive oil
  2. 1 lb. / 450 g potatoes, grated
  3. Salt and pepper, to taste

Directions

  1. Using paper towels or cheesecloth, absorb moisture from the grated potatoes. Divide into 8 equal portions*.
  2. In a large non-stick pan, spray oil to lightly coat the bottom – up to 8 squirts – and place on a burner set to medium-high heat. When the pan is hot (but the oil is not smoking), place each portion of grated potatoes in the pan. Sprinkle some pepper and salt to taste, and cover.
  3. Every few minutes, lift up the edge of the mini hash cakes to check for doneness. Each side should take about 5 minutes. When the bottom is well-browned, lift out of the pan, lightly spray the bottom of the pan as done previously, flip the mini hash cakes, return to the pan, and continue cooking on the second side until also well-browned.
  4. Remove from the pan, and drain the excess oil on paper towels or a cheesecloth.

Serve hot.

*You can also fry the entire potato amount in one large cake, to be sliced when serving

  1. This is so basic, I was expecting more like the ones I make which I called potato latkes, with grated onion, a clove or two of garlic and a little cheese to enhance the taste. Everyone loves these, hope this gives others ideas to spice things up if wanted!

  2. Hi, aadE4. It looks like you would benefit most from using the full Menu Planner application (in “Apps” above), so that you can choose the foods that are best for you and avoid the ones that won’t. There is a video tutorial in the link, if you want.

  3. I cannot eat anything with cranberries, onions, red tomatoes, soy, diary, some nuts, I have a very hard time finding balanced nutrition with lactose intolerance on top of IC… I hope you can help me.

Have just read all the comments listed below….I found the quantity of oil TOO much for me…I did place on paper towels after they were cooked…the hash brown stuck to the paper towel after being refrigerated to be firm enough to wrap and place in the freezer…not happy with this recipe and will not make them again!!! Such a small serving size no wonder!

  5. Hi, rmcmillen. We are working on adding exchange information per serving to our recipes. Not all of them, such as this, have notable amounts of protein, but this will be specified as well.
    Regarding oils, if they are not super-heated for deep-fat-frying, they are fine. Light olive oil may be better than extra-virgin in this regard (but only in this regard).

    • I just joined today, and already have several questions!
      I marked my diet for ‘low cholesterol’, but I cannot find how to get back to page for special needs or choices…where do I find that? I need to reduce my LDL, and I do not want to take a statin or medication of any kind to do this!
      Also I did not see anywhere that addressed how much weight I would like to loose, or where I would like to maintain my weight. Is there anywhere that I am supposed to do that? If not, how do we know these menus will get us to that desired weight? (My goal weight is 150-155 lbs.)
      The diet plan (menu) sent to me is marked ‘85% healthy’! Why is it not 100%? I have not adjusted the ‘plan’ other than ‘no pineapple’, due to allergy to it.
      I would like a phone number to call with questions, rather than email only. Is that available?

      • Hi, Susan, and welcome. To get back to the area in which you can select your special dietary meals, click on your name at the top of the site page. In the same area, you can enter your “goal” weight, and whether you want to lose or maintain your weight.
        The reason the menu score is 85% at this stage is to enable you to ease into what may be a new way of eating for you. If you want to get closer to 100%, you can use the fully personal version of the Menu Planner application, wherein you can select the healthiest foods (in the lightest blue shade in the food lists) – you can get to this area by clicking on the “My Food Choices” icon (an apple) in the toolbar above your menu.
        At this time, we don’t have the option for telephone support, but I am happy to continue to answer any questions you have here. Note that doing it in a forum enables other Clubmembers to learn from responses to your great questions.

  6. Hi, Jmansfield. If you add an egg to this, please do select a good egg such as omega-3 or grass-fed, to make sure the fats are better for you. Note also that this adds a protein and a fat exchange; to make it even, try using a nonstick pan and cutting back on the fat a little.

  7. I am reading the recipes here because I am the cook and my husband needs the weight lose. Can you use the shredded potoatoes by Ore Ida? We have just joined today and the recipes seem to include items, ie..organic milk, oat flour, that must be expensive and used not too often..what is the shelf life of these more unusual items and how often are they really used. He needs to loose the weight and is 72 years young, are there any men out there in this age bracket and if so how are you doing with the diet? Thank you so much. I am looking forward to seeing results.

  8. Sounds like Rosti to me!! Weird questions below and of course you can have a poached egg, bacon, sausage, grilled tomato or whatever you like to make a breakfast. This is a diet club though, so maybe not the bacon or sausage…very yummy though.

Hi everyone, I just made this and i love them i did not use as much oil as called for and my hubby had to eat some of the hash browns because I do not know how to store cut potatoes with out them turning black. I DO HAVE A QUEStion: What type of potato should we use today I used a russette and a white potato. NEXT time i make these I will only grate 1/4 lbs enough for just one porstion.

  10. Thanks for the rinsing tip Lore, it worked brilliantly. This is my first trim breakfast and you helped to make it delicious! I could not believe how much starch came out. I had to have two servings and my husband was disappointed there was not a lot more for him to have!!! My husband came up with my username to inspire me! I am definitely not a little lady but look forward to the day I can look in the mirror and see a little lady looking back at me, the way I was when we got married 19 years ago!

  11. hmmm, might be a good idea to put the grated potatoes into water to get rid of the starch before cooking them otherwise the potatoes tend to get very gooey. In the restaurant I worked at we used to blanch the grated potatoes first so they would cook faster.
