Are Waterchestnuts allowed in the diet? I love an omelet with waterchestnuts, broccoli, cauliflower, tomato, and snap peas – add a little cheese and it’s a wonderfully tasty meal.
Yes – 1/2 cup is a carb exchange.
What is a carb exchange?
A unit with which the menu is built, as in the American Diabetes Association’s system. 1/2 cup water chestnuts = 1 slice of bread = 1/2 cup cooked oatmeal or rice or pasta = 1 potato, etc.
