Ingredients

  1. 1 Tbsp. / 15 ml olive oil
  2. 1 medium onion, chopped
  3. 1 cup / 240 ml vegetable broth
  4. 8 oz. / 225 gm fresh spinach
  5. 2 cups / 320 gm black-eyed peas, cooked
  6. Salt and black pepper, to taste
  7. Cayenne pepper, to taste

Directions

  1. In a large skillet, heat the olive oil and add the onions; sauté until the skins turn translucent.
  2. Add a cup of broth and bring to a gentle boil; stir in the black-eyed peas and the spinach; stir for a couple of minutes until the spinach darkens.
  3. Turn off the heat and transfer to individual serving bowls.
  4. Sprinkle with a dash of salt and cayenne pepper, if desired.

Serving Size: ½ cup / 114 g

      We don’t work with calories in this program, but we do provide “exchange” information according to major nutrients – see “Exchanges per Serving” at the end of the recipe. The following are the general nutritional values of our exchanges:
      1 carb exchange = 15 grams of carbohydrates + up to 3 grams of protein
      1 protein exchange = 7 grams of protein + up to 5 grams of fat

  1. What exactly is meant by Vegetable Broth? (same goes for chicken broth in other recipes) Here in Great Britain “broth” usually means a thick soup, ready to eat as it is; I have a feeling that is not what is meant here! I am finding it quite difficult to work out just what I’m supposed to be doing with this diet – but I’ll give it TIME !!
